I've got a Parker shut off and a new feather touch valve where I've broken a brass nipple off in them. Tried an EZ out on the first but the brass was too soft. Any tips on how I can salvage them.

I have broken mine a few times and the EZ out has always removed it...Are you sure that your EZ out is large enough......the only other thing you can do is slowly put a cut in the brass....a small copping saw blade will work...Brass is pretty soft and cuts easy....just don't over do it and cut into the threads of the valve

You may have to grind the end of the easy-out a bit for a tite fit. If it bottoms out.
