Open them up or puncture holes when you deliver them so the rugs can acclimate. You don't want to trap any moisture.

If you put a "dry" plastic-wrapped rug in the sun, you'll see water condensing on the sunny side of the plastic.

Wool holds a lot of moisture and still feels dry, so any long-term wrap has to breathe. Perforated plastic, paper, Tyvek - even a cotton sheet will keep pests out and let the moisture out.
