Is the oil in triplex style plunger pumps just an ISO65 hydraulic oil without detergent?

It's probably closer to an ISO 100, in most cases, and non-detergent as well. However in only a fraction of situations is a straight general motor oil used. These pumps use a wide array of elastomers, some of which are better served by the unique formulations and additives created for them. You may have to do some research on a particular make and model to see if any conventional fluids would suffice.

Some of the older Hypros would do fine with 30wt Non-Detergent motor oil, while the old 5200 series used auto trans fluid. The Wanner Hydra-Cell also used 30 wt ND motor oil. In our current position we don't assume any unnecessary liability and use only the recommended fill, e.g. Hypro Oil, Cat Pump Oil. With sythetics in the picture, most of them have a longer change-out interval anyway, so the end user still sees a net savings.
