Probably presealing to make grout cleanup easier..

If the goal was to make cleanup easier, wouldnt they be better off sticking to the plan and grout first?
Then cleanup once not twice
Interesting, never heard of doing that.

Good luck with that floor.
Pretty common on porous stone tile, especially if dark grout is going to be used. The darker grout colors can leach into the stone and ruin it.
