Wow. complete idiots. Why are they always going after cleaning. Cut the CEO's pay by 1% and it pays for all the cleaning in all the resturants for the whole year.

How often would you guys suggest Olive Garden clean the carpets?

and 1% Gene Lee's 2 million dollar salary (projected w/ bonuses) isn't going to cover the cleaning in 800+ locations

The above cited article:

New York • Olive Garden's corporate bosses, who are scrutinizing every expense in an effort to turn around the company, have found a new source of waste: carpet cleaning.

Darden Restaurants Inc., which owns Olive Garden, LongHorn Steakhouse and other chains, has dispatched operations teams to the company's restaurants to pull "every single invoice" for hints at ways to keep costs down. The effort uncovered that many restaurants are washing carpets twice a month.

"There's a protocol that you clean carpets once a month," Chief Executive Gene Lee said Tuesday on a conference call to discuss quarterly earnings. "If you do it more than that, you end up actually destroying the carpet — and really not a whole lot of benefit there."

Gene Lee is a moron. I would guess he has similar insights on food costs, preparation, and waste.

After all, there's "really not a whole lot of benefit" to actually discarding stale food, or actually "destroying" linens and uniforms by wasteful washing. And turn down the hot water for dishwashing....

We just cleaned a Darden owned restaurant on the strip. They signed with us for once a year cleaning. This is a fine dining restaurant to which has high traffic since it is in the Fashion Show Mall. When we asked when they had it cleaned last, they had no idea. We did charge .23c a sq. ft. though for over 4,000 sq. ft.

It's been almost 60 days and still no payment from them. Called their AP dept. and they said they have exactly 60 days to pay us, hopefully the check is in the mail.

I always ask who I gotta sleep with first to get faster payment........ When you close your eyes, it's all the same........ Our receivables have been prompt........ :stir:

@Desk Jockey on Nate's computer....

Whats the big deal?

They are right, only need to clean the carpets 1x month.
I'm sure they found lots of other expenses too.

I actually agree with this statement for a restaurant!! :eekk: Oh, boy here it comes.. For the little amount of restaurants I clean it seems to me that the grease actually "protects" the carpet..

Think about it once that grease packs in there, there is no wear or anything that can actually stain it because won't get to the fiber it just sits on top like the protector you guys sell is supposed to..

Disgusting as it may be, I think he's right! He just needs to dim the lights a bit more..:eekk:

I don't think you've fully thought that through.
Grease laden carpet is a magnet for granular soils. We all know very well the damage it causes.

The carpet is so packed with grease the granular soils wont scratch the carpet imo.. So really when you clean them they are more apt to wear do to the granular soil sticking to shoes because of the grease (cutting and scratching where ever they go).

I am no pro with restaurants, and I don't want to be, I HATE them... the hours, nasty carpet,and.. well that's enough for me..

I went to clean one on Monday I was to be there at 5:30, so I thought I would get a jump on it and head out at 4:45(rare half hour drive).. No one was there till 6 AND we had to move all the tables and chairs.. I have No interest cleaning any restaurant!!
