Any system can be hacked given enough time but cloud computing is much more stable and secure than desktop solutions, in general.
We use Amazon Web Services and all the best practices regarding security.
The machines we use are virtual. We get processing power and memory as needed to Handel the load. That means I can have a new machine running during peek times in under 5 minutes. Before cloud computing, provisioning a new machine took 3 days and you were stuck with it.
