Does one need a stainless coil in their heater or is a cast iron heat exchanger acceptable or will there be issues with the iron exchanger and doing weird stuff to the textiles?

Cast is acceptable if you cool it down after usage. Otherwise it just boils black iron contaminated water which will make a big messed.

Steel coil is fine. When I had mine, I would run a heavy concentration of whatever I was using in my Chem jug (some products will work better then others) through it on the highest heat setting (scary hot). It coated the coil nice, and then I never had the black water issue. At the time I was using Masterblend Soap Free and it worked great.
