Quick question about rinse in a greasy restaurant

I clean several restaurants and use grease eraser for the prespray and rinse with a small amount of butler's truckmount detergent. I have no problems with resoiling. The idea of misting an acid in a restaurant for the sake of ph is pointless because the traffic, soil, and grease will soon make it acidic anyway. However, I did think that misting acidic products like fab set on wicking spots helped. Is this not true?
