Is there anything special about this that I should be concerned about?

I have to remove a little sealer. It already has a rougher finish, not honed or polished. Pretty dirty. Was going to hit it with a 400/800 monkey while stripping. Put a penetrating solvent sealer on it. I have not worked with this as far as I can remember.

I've never worked on that one but if you say that it has a rough finish, do a test with the honing pads as they may change the texture of the stone. If the monkeys cut through the brown border ones, it will probably lighten them and you'll have to re hone with a higher grit to match the color (or just color enhance). Have you tried just chemical and Turbo?
