I dry the carpet and pad "in place" when ever possible. What I find during my pre inspection determines how I will proceed. I always lift a corner of the carpet to inspect the pad and look under the pad to examine the floor. Finished hard wood floors, covered by carpet and pad are not a candidate for in place drying.
Common sense is also a factor, the amount of water, how long has it been wet, did water pass from one level to another through the floor?
I use a hydrosenser to determine if the carpet and pad are dry, a surveymaster for sheetrock and moldings and a hammer probe with insulated pins attached to my surveymaster to check floors. I assume all sub floors are double plywood.

You're exactly right. Not all construction is conventional.

The weird stuff we have found during demo is amazing.
